Products and formats

The Jabugo PDO certifies the origin and quality of hams and shoulders of Iberian pigs in different formats which can be identified as follows:

Whole pieces: these are identified by a seal and a band showing the vintage year, the quality grade and identifying codes, depending on quality. They also have the producer’s own labelling.

Boneless: these are identified by the logo and vintage year fire-stamped on the rind, a tag with an identification code and a band with the quality grade of the piece. They also have the producer’s own labelling.

Sliced: these are identified by a label with the identification code and quality grade of the ham from which the slices originate. They also have the producer’s own labelling.

Seals and Bands

The Jamón de Huelva PDO has established its own quality grading system according to a number of factors: the racial purity of the Iberian pigs, their age, their diet, the traditional rearing methods used and the minimum curing period under the natural conditions of the microclimate unique to the towns and villages of our Sierra. These grades are Summum, Excellens and Selección.

  • Jabugo SUMMUM

    The Jabugo PDO awards the SUMMUM quality grade to hams and shoulders which have achieved a harmony in their organoleptic attributes as well as a characteristic aromatic richness. This is as a consequence of the combination of many factors. On the one hand, the racial purity of the 100% Iberian pigs, traditional rearing methods and an exclusive diet of acorns and free-range grazing on the pasturelands. And on the other hand, a very slow curing process in the unique natural conditions and microclimate of the towns and villages of the Sierra de Huelva.

    Each piece is identified by a seal and a band showing the vintage year, the quality grade and an identification code. This code should coincide on both the seal and the band. The piece also carries the producer’s own labelling.

  • Jabugo EXCELLENS

    The Jabugo PDO awards the EXCELLENS quality grade to hams and shoulders which have achieved a harmony in their organoleptic attributes as well as a characteristic aromatic richness. This is as a consequence of the combination of many factors. On the one hand, the racial purity of the 75% Iberian pigs, traditional rearing methods and an exclusive diet of acorns and free-range grazing on the pasturelands. And on the other hand, a very slow curing process in the unique natural conditions and microclimate of the towns and villages of the Sierra de Huelva.

    Each piece is identified by a seal and a band showing the vintage year, the quality grade and an identification code. This code should coincide on both the seal and the band. The piece also carries the producer’s own labelling.

  • Jabugo SELECCIÓN

    The Jabugo PDO awards the SELECCIÓN quality grade to hams and shoulders of Iberian pigs with a minimum of 75% racial purity and which have been fattened on the pasturelands and processed in the unique microclimatic conditions of the towns and villages of the Sierra de Huelva.

    Each piece is identified by a seal and a band showing the year of production, the quality grade and an identification code. The code on the seal should come within the range indicated on the band. The piece also carries the producer’s own labelling.
